Vegetable Pasta Alfredo<\/h3>\n

Ingredients<\/h4>\n

  • \n

    250g Penne Pasta<\/p>\n<\/li>\n

  • \n

    100g butter<\/p>\n<\/li>\n

  • \n

    1 onion, sliced<\/p>\n<\/li>\n

  • \n

    200g Mushrooms, sliced but not too thin<\/p>\n<\/li>\n

  • \n

    \u00bc cup fresh thyme, chopped<\/p>\n<\/li>\n

  • \n

    \u00bc cup fresh basil, chopped<\/p>\n<\/li>\n

  • \n

    1 tbsp Crushed garlic<\/p>\n<\/li>\n

  • \n

    \u00bd cup sundried tomato, chopped<\/p>\n<\/li>\n

  • \n

    2 cups cream, plus extra Salt and pepper<\/p>\n<\/li>\n

  • \n

    Parmesan cheese\u00a0<\/p>\n<\/li>\n<\/ul>\n

    \u00a0Method<\/h4>\n
      \n
    1. In a medium size pot, bring water to a boil. Add in some salt, and a drop of oil and cook the pasta till al dente. Pour into a colander and wash off with cold water. Set aside to drain as much water as possible.<\/li>\n
    2. In a large frying pan melt the butter and add the onion, mushroom, garlic, chopped herbs and sundried tomato and fry till all is well combined and has started to soften up. Season with salt and pepper.<\/li>\n
    3. Add the 2 cups of cream to the ingredients and allow to start simmering, turn down the heat and add in the pasta. If you need to add more cream, you are welcome to. Allow the ingredients to combine and the pasta to absorb some cream and flavour from all the ingredients.<\/li>\n
    4. Do not let all the cream dry up, there still needs to be some liquid with the pasta when serving.<\/li>\n
    5. After 5-8 minutes of low heat simmering, dish up the pasta and sprinkle over Parmesan cheese.<\/li>\n<\/ol>\n
