Makes 1 cake<\/strong><\/em><\/p>\n

\u00a0<\/h3>\n

For the Cake:<\/h3>\n
    \n
  • 2cups flour<\/li>\n
  • 2teaspoons\u00a0baking powder<\/li>\n
  • 2teaspoons\u00a0bicarb<\/li>\n
  • 2teaspoons\u00a0ground cinnamon<\/li>\n
  • \u00beteaspoon\u00a0salt<\/li>\n
  • 3cups grated carrots<\/li>\n
  • 1cup\u00a0chopped pecans<\/li>\n
  • 2cups\u00a0sugar<\/li>\n
  • 1cup\u00a0sunflower oil<\/li>\n
  • 4large eggs<\/li>\n<\/ul>\n

    For the Frosting<\/h3>\n
      \n
    • 240g\u00a0soft cream cheese<\/li>\n
    • 200g soft butter<\/li>\n
    • 4 cups icing sugar<\/li>\n
    • 1\u00a0tablespoon lemon juice<\/li>\n
    • \u00a0Toasted finely chopped nuts<\/li>\n<\/ul>\n

      Preparation<\/h3>\n
        \n
      • Whisk together the flour, cinnamon, baking powder, baking soda and salt and set aside. In another bowl, stir together the carrots and chopped nuts.<\/li>\n
      • Working in a mixer fitted with the paddle attachment, beat the sugar and oil together until smooth. Add the eggs one by one and continue to beat until the batter is even smoother, Reduce the speed to low, and gently stir in the flour mixture \u2014 mix only until the dry ingredients disappear. Just as gently, stir in the chunky ingredients.<\/li>\n
      • Divide into 2 springform round baking pans (23cm). Bake the cakes for 40 to 50 minutes. Transfer the pans to cooling racks, cool for 5 minutes, then turn out onto racks to cool<\/li>\n<\/ul>\n

        For the frosting:<\/h3>\n
          \n
        • Beat the cream cheese and butter together until smooth and creamy. Gradually add the sugar and continue to beat until the frosting is velvety smooth. Beat in the lemon juice or extract.<\/li>\n<\/ul>\n
