Ingredients<\/h2>\n

Serves 4 – 6 <\/strong><\/em><\/p>\n

For the dressing<\/h4>\n
    \n
  • 1\/3 c. red wine vinegar<\/li>\n
  • 1 tbsp. Dijon mustard<\/li>\n
  • 2\/3 c. extra-virgin olive oil<\/li>\n
  • Kosher salt<\/li>\n
  • Freshly ground black pepper<\/li>\n<\/ul>\n

    For the salad<\/h4>\n
      \n
    • 1 head of lettuce, coarsely chopped<\/li>\n
    • 4 hard-boiled eggs, peeled and quartered<\/li>\n
    • 400g cooked chicken breast, diced<\/li>\n
    • 8 slices bacon, cooked and crumbled<\/li>\n
    • 1 avocado, thinly sliced<\/li>\n
    • 150g crumbled feta cheese<\/li>\n
    • 200g cherry tomatoes, halved<\/li>\n
    • 2 medium red onions<\/li>\n
    • 2 punnets baby corn, blanched<\/li>\n
    • 2 tbsp. finely chopped chives<\/li>\n<\/ul>\n

      Method<\/h2>\n

      For the Dressing<\/h4>\n
        \n
      1. In a jar, shake together vinegar, mustard, and oil and season with salt and pepper.<\/li>\n<\/ol>\n

        For the Salad<\/h4>\n
          \n
        1. On a large platter, spread out lettuce, then add rows of hard-boiled egg, chicken, bacon, avocado, feta cheese, onions, baby corn and cherry tomatoes.<\/li>\n
        2. Pour the sauce into a serving bowl, and serve with the salad for everyone to add according to their own liking.<\/li>\n<\/ol>\n

          Notes:<\/strong><\/p>\n

            \n
          • Hard-boiled egg boils for 8-10 minutes. If you prefer the yolk to be a little less underdone you can boil it for 6- 8 minutes.<\/li>\n
          • Let the avocado slices lay inside lemon juice and water to prevent it from browning.<\/li>\n
          • The chicken breast can be seasoned according to your liking.<\/li>\n<\/ul>\n
